Cooking with coconut oil

...has been a hit with vegans for a while. Should you consider adding this fat to your diet? I have posted a bit of an introduction on my recipe blog. There is a recipe for roasting sweet potatoes in it - that's the first recipe I'm trying.

  1. Is this a liquid oil or a solid? Or both? I am going to try this for sure as I do like the taste cocunut milk brings to curries.

  2. It is a solid at room temperature and melts quickly when warmed.
